During the panel, our Mezcalero JJ shed light on some of the critical challenges the industry is facing, including the harmful use of ammonium sulfate to artificially accelerate fermentation, and the excessive use of glyphosate for weed control in agave fields. As a recognition for his contributions, JJ received a special acknowledgment at the end of the event.
COMERCAM (short for Consejo Mexicano Regulador de la Calidad del Mezcal) is the Mexican Regulatory Council for Mezcal. This organization safeguards the quality, authenticity, and certification of mezcal under the Denomination of Origin (DO) guidelines, preserving the heritage and integrity of this iconic spirit.
For us, this milestone holds deep significance. JJ's father, one of COMERCAM's founding members, helped establish the Denomination of Origin and the Normas Oficiales Mexicanas in 1994, laying the foundation for the modern mezcal industry.
